Are you like me, and can't get enough of that tasty bottom feeder known commonly as the catfish? Solution: Eat it for dessert, too. I think of the gooey texture of the brownie with those flaky, fatty pieces of catfish cooked right in it and I start to salivate, man! The sweet richness of a chocolate
brownie coupled with the sturdy, slightly sweet taste of catfish sounds like a good idea to me. I'm sure if it was prepared lovingly and people approached it with an open mind, that this could catch on.

I think there's too much pessimism about this idea. I bet that more than one of you have eaten, and enjoyed, carrot cake before now. Perhaps catfish brownies would be a similar happy surprise. |

Speaking of carrot cake, I once attempted to substitute broccoli for the Carrot. It smelled pretty good in the oven for a while, but the finished product was burnt on the outside, and still mushy on the inside. |

You need to use less broccoli and cook a little longer at a lower temperature. That seems to be the answer for all the vegetable cakes I make. |
