This is a stand-alone appliance with several independently temperature controlled drawers for all your produce. It would look similar to one of those glass door wine coolers. You put in fresh produce that isn't quite ripe yet, and using AI with a suite of sensors (cameras, lasers, articulated silicone tipped probes, and possibly air pressurization) to determine what it's dealing with and its level of ripeness, it adjusts the atmospheric conditions within the drawer to the ideal ripening temperature, humidity, and even air pressure. It monitors the produce every few hours, checking the color and firmness until it gets as close to perfectly ripe as the technology allows it to determine, then lowers the temp to refrigeration level to halt further ripening.

       Is there an advantage to getting a complicated machine to do this on an individual basis, rather than having the supplier do it for you and buying it at optimal ripeness?

       If you're buying most of your produce at a grocery store, probably not much. But if you grow much of your own in a garden, or buy from farmer's markets, it can be a good idea to get them before they're fully ripe because they're less enticing to pests such as insects and birds that might otherwise get at them before you. There's also less competition from other shoppers for unripe produce.
