       The divided hex pickup used on MIDI guitars isn't wired for 6-channel sound, but it could be.

       Roger Waters of Pink Floyd used to play a surround-sound bass guitar (four pickups). The bass riff of "Money" would skip around the hall. Nice effect.

Well, it is on mine. Each segment of the MIDI pickup can be assigned to its own MIDI channel, and your synth set-up can deal with the rest. Synth 1 responds to, say, channels 1 & 2, and the voices on those channels are panned hard right and hard left respectively. Synth 2 responds to MIDI channels 3 & 4, and synth 3 to channels 5 & 6. Three stereo amps, six speakers, and you're in business.
You don't need to go to MIDI though. Kent Armstrong (linky) can custom-build single-string pickups so you can have a six-channel output, again feeding three stereo amps.
