Keto Crispy Coating

Keto-Friendly Crumb Coating Adds Crispiness to Cooked Food Items

Another idea that occurred to me is some kind of breadcrumb coating (aka. panko) that adds to surface crispiness, but I would want it to be keto/carb-free (breadcrumbs do have significant carbs and are therefore non-keto).

We could call it Keto Panko, and it would have to be able to cling to food without requiring a binder (eg. egg yolk). An item coated with it (eg. drumstick or onion ring) could be cooked directly in air fryer without having to be deep fried, while still providing the same texture as deep-fried cooking.

A quick google search does show a nifty product called Pork Panko, which is zero-carb. But it's totally dry and still needs a separate binder to make it stick. I'm fine with pork products, but I'd imagine those who can't eat pork wouldn't like the stuff.

       I'm imagining some built-in oiliness would make the coating sticky enough, while also providing that deep fried texture. It would be granular and sticky enough to stick on, but not quite a paste. Perhaps some suitably thick fat could be among the ingredients.
