I’ve noticed that humans at waterparks sometimes apply detergent so they go faster I think that gooey things like personal lubricants might work just as well

Fish have a gooey layer which assists their movement

I think that big swimmable blobs of algae with either naturally produced slippery coating or as places to put slippery material would be amusing plus beneficial to dolphins

They could swim through the coating area repeatedly if they felt like it to have particularly pleasant swimming
