Alternative target patches for fencing jackets

Fencing jackets used to have little patches overlying the heart. Now it would seem this is considered declasse as I could not easily find an image to depict this. I was wondering why only the heart? Are the other innards unworthly of a good sword poking?

       Would people with missing kidneys, situs inversus, undescended testes, etc. be required to put the targets in the anatomically correct positions?   

       Also: //...urge...to...ask// The appropriate sound for most organs is "squish."
