Hitachi HD44780 LCD is a very common LCD standard for lots of hobbyist projects. (e.g. arduino projects).

You can also find it in use in many printers, and other products, due to its simple interface.

I wonder if it would be a good idea to somehow replace the LCD top with a standard eink LCD display.

Only problem I could see, is how to deal with ghosting in the eink screen. Also sometimes on power-off, you want to clear the screen, and sometimes you want to leave the content on. Not sure how to deal with that.

But that's why this idea is halfbaked anyway.

E-ink display pixels have a much much slower response time than LCD display pixels. So, e-ink displays are fine for static images, but not at all good for video.

you'd need some intermediate circuitry, at which point you may as well get an e-ink display-controller that's deviceside pin/programming compatible with the aforesaid whatsis.
