This flat metal plate would be an extension of the freezer coils. It would be kept as cold as possible inside the freezer to hasten the cooling of things that need to get cold quick.

       there are blast chillers that cool things down quickly - they use the small version in restaurants to create ice creams or terrine/custards or something

       I haven't seen any regular domestic freezers with this, so [+]. It would be enough to just sell a thickish metal plate which would sit on one of the freezer shelves (the fixed ones, which have the cooling coil snaking through then). Defrost freezer, add metal plate, job done.
