MC Escher Bar

 A bar with no central space, but rather a series of windy unpredictable staircases.

There would be landings that had bar spaces on them. People would be free to roam from one to the next. Escalators and carousels would complete the dish. Music would be light, and perhaps jazzy (I'm thinking Nina Simone's Sinnerman from The Thomas Crowne Affair.) No central dancefloor leads to more chances to have a private convo with that chick you saw on the down escalator.

Fire hazards be damned.
