This is a horizontal clamp fitted to the fileting table where invasive Lionfish are gutted and prepared for restaurants. The flesh of the venomous fish is excellent white meat and only the spines are dangerous.
The venomous dorsal spines of the fish are clamped between long flat jaws that both cover
and hold the fish in place, keeping the fishmonger safe, but also squeeze out and collect the venom that runs out of the clamped spines and into a groove that empties into a reservoir.
Some incredibly useful stuff will be found in this most painful of venoms by researchers who have not had enough venom to work with.
