I think you would have to be skimboarding, or the water would have to be too deep for the horses to go fast enough. |

no -- the horsers are on dry land, of course. Sorry about not making that clear. |

I'm envisioning either a straightaway where the horses are to the left and/or right of the water canal, or concentric dry/wet circles |

Can we use dolphins instead, or well trained tuna? |

Use narwhals, and you wouldn't need a sword. |

If the horses are to the left or right wouldn't you be pulled toward the wall at high speeds? I've heard of mules pulling barges from one side but those were slow moving not at jet ski speeds. But if have them on both side of the straightaway it would be pretty cool. You've got my vote. |

One horse to the left of the water, and one to the right? |
|
|
That would seem to be the simpler way to do it |

When you water ski, you can maintain a course parallel to your towing vehicle by exerting a slight pressure on the 'outside' edge of your ski. You can do this here as well, obviating the need for a second rhino and making it easier to joust. |

I suppose all of the action would be cut short by someone just hacking at the ropes. |

Bonus is that if the horse stops running, you sink. |

This idea with the annotations is a gem. |
