I've worked with a 7 string classical for a few years now.I bought a Giannini 7 string classical with a very bad sounding pick-up. After getting the guitar fitted with an L.R. Baggs pick-up, it sounds pretty good. I have to say, after getting use to the wider neck, I love having an extra lower bass sring. New chords, some easier hand positions are some of the benifits. I've done some recording with the guitar. It's a pain to deal with the eq and mike placement. But, when it works, it sounds great. A 7 string classical guitar is good for solo guitar playing. I wouldn't consider using it in a band.
