OK, not really "gravity defying", but I have in my head an image of a carnival game that is played by throwing balls (or other things) into an upwardly moving stream of air (really big fan, pointed straight up).
The objective would be to try to get the balls into holes of various sizes in the ceiling of the game's structure.
