I should have said that the name of each fruit available on the day of competition is written on a card, all the cards are put into container, mixed up, and the judge selects one of the cards without looking to determine which fruit it used.

You could fix this by using the variation of fruit like a handicap mechanism to even-up the differences between the athletic prowesses of the competitors.
